Healthy Snack Bars Even Your Kids Will Love
I accidentally made something my kids love. (And I like it too.)
I was experimenting with a recipe to add protein to trail mix, for a healthy trail mix workshop and nutrition chat I’m doing for a local group.
This recipe transpired.
It ended up not being right for the trail mix, but it made awesome, healthy snacks for the kids. I let them taste my first attempt and they ate the entire batch! So I made more, just to have some for later, and they promptly devoured that, too.
Finding a to-go snack that has protein in it can be challenging. These have a good balance of protein, carbs, and fats that I’m content with giving my kiddos. My daughter usually eats a LARABAR in the car, but these homemade snack bars pack a little more protein.

Ingredients
2 tablespoons of peanut butter (no sugar added, natural)
2 tablespoons of dark chocolate chips
1 ounce of milk
1 scoop of protein powder (I used chocolate)
½ cup rolled oats
Directions
To make these protein clusters you’ll want to melt on the stovetop and mix together 2 tablespoons of peanut butter, 1 ounce of milk and 2 tablespoons of dark chocolate (I used dark chocolate chips, but any form of dark chocolate will do).
After that’s done, quickly mix in 1 scoop of protein powder (I used chocolate flavor, but feel free to experiment) and 1/2 cup of rolled oats.
Put the mixture onto plastic wrap and use the plastic wrap to shape into a square. Cover and freeze. When solid, cut into rectangles or bite size pieces.
Keep refrigerated for up to 1 week.
